About the Vineyard
The fruit is sourced from Langhorne Creek, grown by renowned viticulturist Brad Case. The name “Fred Fiano” is Charlotte’s heartfelt tribute to her beloved father (always as busy as a bee). Fiano is often called “the wine of the bees,” as its blossoms and grapes naturally attract these tireless workers.
Vinification
The grapes were whole-bunch pressed directly into French oak barrels, 10% of which were new. Fermentation occurred naturally with wild yeasts, followed by full malolactic fermentation. The wine remained on its lees until bottling, with only a minimal addition of SO₂ and no other inputs. Fiano is a highly adaptable variety—when made well, it delivers structure, acidity, and striking elegance. Expect notes of jasmine and orange blossom, charred jalapeño, fennel, and freshly cut galangal. The palate shows rich texture with subtle creamy and nutty tones, lifted by vibrant lime-like acidity.

About the Winery
Charlotte Dalton Wines is based in Port Elliot, South Australia, founded by Charlotte Hardy in 2015 with a focus on minimal-intervention winemaking. In 2016, just months after releasing her first wines, Charlotte Dalton Wines was named one of the “Top 10 Best New Wineries of 2016” by leading critic James Halliday, receiving a five-star rating. Charlotte was also a Top 10 finalist in the 2017 Young Gun of Wine awards, and in 2021 she won the Young Gun of Wine trophy.
