Farming is busy work—besides planting, farmers also grow their own koji bacteria. We use Xiuming Natural Farming methods to grow organic rice and ferment it with our homemade koji bacteria. After hours of careful fermentation, the rice becomes beautifully coated in koji.
Koji is essential in Japanese cooking, transforming ingredients into flavorsome magic. It’s why even Noma restaurant loves it. White koji rice can be used to make soy sauce, salt koji, amazake, and more—perfect for those too busy to make their own.
