After salting the cucumber to draw out excess water, it is sun-dried for a period of time, then cleaned and sliced thinly. The cucumber is then fermented with a base of green plum juice, preserving its traditional aroma while imparting a mildly tangy-sweet flavour. This creates a dish that is easy to enjoy on its own, with a subtle fragrance, or as a flavourful addition to other dishes.
