The thick rice noodles are made from rice that has been soaked and ground into a slurry, then pressed into strips and boiled in hot water, before being cooled in cold water. This method, which dates back over a century, is considered the original form of Taiwanese rice noodles and is referred to by the older generations in Hsinchu as simply "rice noodles." Because they are made using a boiling method, they are commonly called "water noodles," distinguishing them from the current mainstream method in Hsinchu, which uses steaming and is known as "steamed noodles" or "fine rice noodles."
Made from high-quality rice, require more time and effort to prepare and are more costly, which has led to them nearly disappearing in Taiwan. However, their simple, authentic flavor and smooth texture have made them a nostalgic favorite for many food enthusiasts who still crave the taste. For those with gluten allergies, they are also the best alternative to traditional noodles.
Product Features|Made from pure rice with no additives. They are fully cooked before drying, so they don’t require excessive soaking or heating, and there is no need to cut them with scissors.
Preparation|Since the rice noodles are thicker, soak them for about 10-20 minutes before cooking (using hot water will shorten the soaking time). Once slightly soaked, the noodles will loosen up, making it easier to heat them evenly. However, be careful not to soak or heat them too long, as the noodles may break during cooking.
Cooking Time|Heat for about 4-8 minutes until ready to eat. You can adjust the cooking time and water amount based on your personal preference.
